- ½ cup softened unsalted butter
- ½ cup white granulated sugar
- ½ cup light brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ¼ cups overripe banana
- 1 ½ cups of All-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- ½ cup sour cream
Preheat oven to 350F.
Mash bananas in a bowl and set aside, these do not need to be smooth.
Cream together butter, white sugar, brown sugar, eggs and vanilla extract.
Mix in mashed banana.
Sieve in flour, baking soda and salt and mix with a spatula.
Add in sour cream and fold in until well combined.
Transfer mix into a loaf pan or dish and bake for 1 hour.
