Okay, I f***ed up. Daddy Kibs and I had a heated argument the other day. Okay, if you don’t follow me on Instagram, then you really might be asking who that is! Lol. That is my husband, my lover of 14 years, well, 6 years married.
And while the argument we had is something that will always happen in every relationship or marriage, I think I might have said too much while boiling. Threw a few words around that I later felt sour about.
After the argument came the silence phase, where both parties individually fought the urge to be the first to speak. So, your girl went into the kitchen and did what she knows how to do best…cook!
I had an overripe banana bunch just sitting on my kitchen counter and then I thought – when life gives you bananas, make a delicious and classic banana recipe! Well, at least I was positive that this would help sweeten hubby’s heart, he would forget we ever fought…I hoped. And it worked! My magical hands whipped up a treat, one bite and we were singing sweet nothings as always.

Banana Bread Ingredients
Overripe bananas: Overripe bananas are the best for that rich banana sweetness, but, if you can’t wait for the ones you have to be overripe, still go on ahead friend!
Sugars: I used a combination of white and brown sugars, brown for the rich caramel-like flavour, and white sugar for basic sweetness.
Flour: Regular All-purpose flour was used in this recipe.
Unsalted butter: This will be needed at room temperature, so leave it out for a few hours on your countertop, or overnight prior to baking.
Sour cream: Use unsweetened Greek yoghurt in the absence of sour cream. It enhances the fluffiness and moisture of the bread.

Banana Bread Recipe
Ingredients
- ½ cup softened unsalted butter
- ½ cup white granulated sugar
- ½ cup light brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ¼ cups overripe banana
- 1 ½ cups of All-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- ½ cup sour cream
Instructions
- Preheat oven to 350F.
- Mash bananas in a bowl and set aside, these do not need to be smooth.
- Cream together butter, white sugar, brown sugar, eggs and vanilla extract.
- Mix in mashed banana.
- Sieve in flour, baking soda and salt and mix with a spatula.
- Add in sour cream and fold in until well combined.
- Transfer mix into a loaf pan or dish and bake for 1 hour.
