Beef in Gravy

Beef in Gravy is a classic and delicious gravy made with soft beef cuts cooked in a mix of sauces and aromatics. It is a quick and perfect pair option to rice, mashed potatoes etc.

Taking a dish from basic to ‘wowza!’ can be as simple as pairing it with a delicious beef in gravy. This is the type of gravy you serve with anything; mashed potatoes, white rice, potatoes etc.

I was at the store the other day to get ingredients to make my family some creamy mashed potatoes. Here I am walking past the butchery section of the store and I see beef is on sale. Now tell me, who am I to pass on beef cuts that are on SALE???

Without thinking, I pick up a pack and toss it in my cart. I got home and began to think about what to make with it. I figured whatever I made should be something that will pair well with the mashed potatoes. And the rest they say is history.

What is a gravy?

A gravy is essentially any sauce made out of meat drippings, usually thickened with some cornstarch or flour. In this case, it will be the drippings of the beef we are using.

Ingredients needed for the Beef in Gravy

This gravy recipe requires just a few simple ingredients:

Beef

Beef is certainly needed. You can switch this for any other type of protein you prefer. For the beef, it was important to opt for a part that is tender when cooked. As a result, I chose beef sirloin, some others are rib steak or tenderloin.

Unsalted butter

This in place of regular oil gives the sauce its much needed flavour.

Sauces

A mix of low-sodium soy sauce and oyster sauce were used to marinate the beef and form the gravy.

Cornstarch

I decided to go with cornstarch for thickening, flour can also be used.

Aromatics

Chopped onions, minced ginger and garlic give this sauce the aromatic appeal it has.

Spices & Seasoning

You need the basics; salt, black pepper, dry oregano, paprika etc.

The beef is marinated in the sauces, seasonings and spices for a few hours. If you have ample amount of patience, leave it overnight in the refrigerator.

Saute beef in melted butter until browned slightly. Then the mix of soy sauce and cornstarch is added to deglaze the skillet and thicken the juices released by the beef.

Ingredients
  

  • 2 lbs beef cuts tenderloin or sirloin preferably
  • ½ stick unsalted butter
  • 4 Tbsp oyster sauce
  • ¼ cup low sodium soy sauce
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp paprika
  • salt to taste
  • 2 Tbsp cornstarch
  • ½ white onion chopped for garnish

Instructions
 

  • Rinse and pat beef cuts dry, transfer to a bowl.
  • Add in the oyster sauce, 2 Tbsp of soy sauce, oregano, salt, black pepper and paprika. Combine and set aside to sit for at least 2 hours.
  • Heat up large skillet, toss in the unsalted butter and let it melt completely.
  • Add in the marinated beef and let it sear on high heat for 3-5, then reduce the heat and keep tossing around with a spatula so it browns nicely.
  • In a bowl, combine the rest of the soy sauce and the cornstarch. If too thick, you can add 1-2 tbsp of water, mix until cornstarch is well dissolved.
  • Pour in the slurry into the skillet, cover and let it simmer on medium to low heat. It should begin to thicken in 5 minutes of cooking slowly.
  • Adjust the seasoning if needed and turn off the heat when beef cuts have tenderized to your liking.
  • Serve hot or warm with some rice or mashed potatoes.
